A Healthy Dessert Recipe From My Kitchen to Yours

 
Try this clean freezer fudge for a satisfying healthy treat that won’t send your blood sugar soaring!

Try this clean freezer fudge for a satisfying healthy treat that won’t send your blood sugar soaring!

 

Ingredients:

  • 1 cup natural almond butter or nut butter alternative (be sure to choose one without added sugar or preservatives)

  • 1/8 teaspoon salt

  • 2 tablespoons coconut oil (melted)

  • 3 tablespoons coconut butter (softened and easy to stir)*

  • 1-2 tablespoons pure maple syrup or honey (optional)

  • Few drops of vanilla extract or maple extract (optional)

Directions:

  1. Line a small pan with parchment paper or use candy molds.

  2. Warm coconut oil to melt and warm coconut butter to soften. (You can combine these and warm together. The final consistency should be easy to stir.)

  3. Whisk together almond butter, coconut oil, coconut butter, salt, sweetener (if using) and extract (if using).

  4. Continue stirring until all ingredients are combined and the batter is smooth.

  5. Pour/spoon into candy molds or pan and freeze until firm (about 20 minutes).

  6. Store leftovers in the freezer.

*Coconut butter is shredded, unsweetened coconut blended until it becomes a smooth, creamy butter. You can make it yourself or buy it already made. I used Artisana Organics. Don’t have coconut butter? Just replace this ingredient with additional coconut oil.
